A light low fat, low calorie salad. A great dinner party starter.

Recipe Ingredients for Fresh Crab Salad

150 g crab, shell meat only
25 g lettuce leaves
2 tbsp light mayonnaise
4 tbsp yoghurt
1 tbsp tomato puree
1 tbsp soy sauce
1 tbsp horseradish
300 g lemons, one lemon quatered and one juiced
1 garlic clove, crushed
10 g watercress

Recipe Directions for Fresh Crab Salad

  1. To make the sauce mix the mayonnaise, yoghurt, tomato puree, horseradish, soy sauce, lemon juice, garlic clove and seasoning. Put this to one side for a minute.

  2. Shred the lettuce and arrange it in the bottom of 4 stemmed glasses or 4 quite small dishes. Divide the crab between the glasses and then drizzle over the sauce. Finish with the lemon wedges on the side and watercress on top of the sauce and crab.
