Fresh corn kernels, diced tomatoes & onion in basic vinaigrette.

Recipe Ingredients for Fresh Corn & Tomato Salad

2 ears corn
2 Roma tomatoes
2 tbsp. minced red onion
2 tbsp. olive oil
1/2 tsp. balsamic vinegar
1/2 tsp. lemon juice
1/4 tsp. sea salt
1/4 tsp. ground black pepper
2 tsp. minced parsley

Recipe Directions for Fresh Corn & Tomato Salad

  1. Remove kernels from cob. Place in large bowl.

  2. Dice tomatoes. Add to corn.

  3. Mince two slices red onion to get 2 tbsp. Add.

  4. Add rest of ingredients, mix well and refrigerate until ready to serve.

  5. 1/2 cup per serving.
