Delicious corn salsa that can be served with tortilla chips or as a small side dish (make extra if serving as a side).

Recipe Ingredients for Fresh Corn Salsa

448 grams Corn
34 grams Peppers, Jalapeno
40 grams Shallots
78 grams Tomatoes
1 oz Lime Juice
0.5 tbsp Honey Clover
1 tbsp Olive Oil
0.13 tsp Sea Salt
1/4 cup Coriander Leaves

Recipe Directions for Fresh Corn Salsa

  1. Cut corn off of cob (4 cobs)

  2. Boil 2 cups water and add 1/8 tsp baking soda and 1/8 tsp salt. Add corn to boiling water and remove from heat. Let sit for 10 minutes.

  3. Chop jalapeno, shallot, tomato and cilantro.

  4. In a bowl, whisk lime juice, salt & pepper (to taste), olive oil and honey.

  5. Drain corn and let sit from another 10 mins to cool. When cooled, add corn and chopped veggies to dressing in bowl. Stir well. Let sit 10 mins to meld flavors. Can serve room temp or chilled.
