Fresh sweet summer corn requires no cooking which makes this a particularly appealing side dish for grilled fish, poultry, or meat. If fresh is unavailable, subsitute frozen whole-kernel corn.

Recipe Ingredients for Fresh Corn Salad (Cooking Light)

3/4 cup light sour cream
1 teaspoon Worcestershire sauce
1/2 teaspoon seasoned salt
3 cups corn kernels
1 cup finely chopped red bell pepper
1 cup finely chopped green onions

Recipe Directions for Fresh Corn Salad (Cooking Light)

  1. Combine first 3 ingredients in a large bowl, stirring with a wisk.

  2. Add corn and remaining ingredients, stirring to combine.

  3. Cover and refridgerate at least 2 hours before serving.
