Fresh Grilled Corn Salad - 1 Serving = 1 oz

Recipe Ingredients for Fresh Corn Salad - 1 Serving = 1 oz

15 3/10 ounces Sweet Corn
5 4/5 oz Grape Tomatoes
3 oz Peppers, Sweet, Red
2 tbsp Basil, Fresh
2 tbsp Lemon Juice
0.67 tbsp Extra Virgin Olive Oil

Recipe Directions for Fresh Corn Salad - 1 Serving = 1 oz

  1. Grill the corn, turning to cook all sides, until some of the kernels are slightly charred, 8 minutes total.

  2. Let stand until cool enough to handle, about 5 minutes

  3. Remove the kernels from the cobs using a sharp knife.

  4. Combine corn, tomatoes and bell pepper in a medium bowl

  5. Stir in basil, vinegar, oil and 1/4 tsp salt
