Recipe Ingredients for Fresh Cool Jicama "Rice"

2 c jicama
1/4 c diced red onion
1/2 c finely diced red bell pepper
1/2 c finely diced yellow bell pepper
3 roma tomato
1 clove garlic minced
1/8 tsp black pepper
1 tbs olive oil
1/2 tsp ground cumin
1/4 tsp sea salt
2 tbs lime juice

Recipe Directions for Fresh Cool Jicama "Rice"

Dice jicama into rice sized pieces using either a mandolin and slicing the stacks, or placing 1" by 2" cubes into the Vitamix and processing on variable 3 with tamper wand. I diced everything seperately in my Vitamix a cup or two at a time. Mix, marinate at least 2 hours.
