Fresh Broccoli Cassarole Recipe

Each serving will be a little over 1 2/3c -- loaded with good protein and delicious cheesy broccoli. A great vegetarian (not vegan) dinner. Good with a bowl of bean soup, or a plate of fresh fruit. --Also works well in individual cassaroles -- decrease cooking time by 10 minutes.

Recipe Ingredients for Fresh Broccoli Cassarole

28 oz fresh broccoli
8 oz shitake mushrooms
10 oz whole wheat pasta
1 c plain yogurt
1/2 c ranch dressing
1 1/2 c 2% milk
5 eggs
8 oz 2% cheddar cheese
4 oz mozzerella cheese
3 oz parmesean cheese
4 oz feta cheese
3 cloves garlic
1 oz fresh basil
1 oz shallots
1 t salt
1/2 t pepper

Recipe Directions for Fresh Broccoli Cassarole

  1. Spray a lasagne pan with Pam or similar preparation, and preheat oven to 400.

  2. Peel the tough outsides from the broccoli stems, then chop all broc and mushrooms to a small dice -- about 1/2" bits.

  3. Steam veggies for 5 minutes, then drain on paper towels and set aside to cool slightly.

  4. Prepare whole wheat pasta (Orzo works especially well) until tender, then drain and set aside.

  5. Whisk together milk, ranch dressing, yogurt and eggs, and season with crushed garlic, half the parmesean cheese, salt, pepper, and minced basil.

  6. Toss veggies with orzo pasta. The mixture should be almost room temp -- then toss with shredded cheeses and press into the prepared baking dish.

  7. Gently pour liquids mixture into the veggies/ cheese/ pasta, and press down in the pan. Top with remaining parmesean cheese and bake for 40 minutes, reducing heat to 375 after the first 15 minutes.

  8. Test to make sure it is done by inserting a knife into the center of the pan. (May require up to 20 minutes longer depending on your oven.)
