A lightly creamy broth soup with fresh mushrooms and beef.

Recipe Ingredients for Fresh Beef and Mushroom Soup

1 tbsp butter
1 onion, chopped
12 oz. sirloin steak, cubed
1 lb white mushrooms, halved
8 oz. portabella mushrooms, halved
1 1/4 cup whole milk
3 1/2 cups vegetable broth
1 salt
1 pepper
2 cloves garlic, chopped
1/2 tsp cayenne pepper
1/2 tsp paprika
1 tsp garlic powder

Recipe Directions for Fresh Beef and Mushroom Soup

  1. Heat the butter in a large pot and cook the steak with seasonings until browned. Add onion and cook until softened and golden.

  2. Wipe each mushroom with a damp cloth and cut any large mushrooms into smaller, bite-size pieces.

  3. Add the mushrooms to the skillet, stirring quickly to coat in the oil.

  4. Add the milk to the skillet and bring to a boil. Reduce the heat, then cover and let simmer 5 minutes. Gradually stir in the hot stock/broth and salt and pepper to taste.

  5. Simmer for 10 minutes. Serve.
