Light salad great on top of lettuce for lunch, combined with couscous for a little more substance, or as a side dish at dinner.

Recipe Ingredients for Fresh Bean and Corn Salad

15 oz black beans, drained and rinsed
15 oz pinto beans, drained and rinsed
1/2 cup zucchini, chopped
1/8 cup cilantro, chopped
1/2 cup corn
1/8 cup white wine vinegar
1/8 cup olive oil
1 clove garlic, pressed
1 t cumin
1/4 t salt
1/8 t pepper

Recipe Directions for Fresh Bean and Corn Salad

  1. Drain and rinse beans. Chop zucchini and cilantro. Combine beans, zucchini, cilantro, and corn in a medium bowl.

  2. Whisk together remaining ingredients in a separate bowl to make dressing. Pour dressing over the vegetables.

  3. Enjoy!

  4. NOTE: This tastes great at room temperature. If you have time, let it sit on the counter for 1/2 hour to let the flavors blend together.
