Recipe Ingredients for Fresh Banana Muffins

2 cups rolled oats
2 cups whole wheat flour
1 cup flour
1 cup spelt flour
2 cup flax
3 1/4 tbsp baking powder
1 tsp baking soda
1 1/2 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
1 tsp vanilla
6 bananas
1/3 cup safflower oil
1 1/4 cup dates
2 cups water
1/10 cup canola oil

Recipe Directions for Fresh Banana Muffins

  1. Mash bananas.

  2. Puree dates (after boiling 30 minutes with equal amount of water).

  3. Mix dry.

  4. Mix wet (excluding canola oil).

  5. Oil muffin tins with canola oil.

  6. Mix and divide into muffin tins.

  7. Bake 40 minutes at 325.
