Takes quite a bit of prep, but very tasty.

Recipe Ingredients for Fresh Asparagus Soup

1 lb. fresh asparagus, chopped
1/4 c chopped onion
2 c chicken broth
2 T margarine
2 T flour
1/2 t. salt
1/2 c sour cream
1 T lemon juice
1 c milk

Recipe Directions for Fresh Asparagus Soup

  1. Cook asparagus, onion and chicken broth in a covered saucepan

  2. When asparagus is just tender, if desired, press through food mills or blend until smooth

  3. Heat margarine, flour, salt and pepper in saucepan

  4. Stir in additional 1 C chicken broth

  5. Cook over medium heat, stirring constantly, until mixture reaches boiling point

  6. Stir in asparagus puree, 1 C milk

  7. Stir a little hot mixture into sour cream.

  8. Stir into soup

  9. Add lemon juice
