Homemade French Vanilla Ice Cream

Recipe Ingredients for French Vanilla Ice Cream

1 1/2 cups whipping cream
2 cups whole milk
1 1/2 cups skim milk
8 egg yolks
1 cup sugar
4 teaspoons vanilla extract
1/4 teaspoon salt

Recipe Directions for French Vanilla Ice Cream

  1. In saucepan, heat skim milk and 1 cup whole milk until very hot, but not boiling.

  2. In a large bowl, beat egg yolks slightly and mix with sugar until smooth and slightly thickened, about 30 seconds.

  3. Gradually stir hot milk into the egg mixture and continue stirring until thoroughly mixed.

  4. Return mixture to saucepan and heat on medium until steaming and small bubbles form around the edges, but do not boil.

  5. Return to the large bowl and mix in the remaining whole milk, whipping cream, vanilla and salt.

  6. Cover and cool for several hours until chilled. Freeze according to your ice cream maker instructions or place in freezer and stir every couple hours.
