I used a 10 ounce can of tomatoes with green chilies. I think the amount of olive oil could be reduced.

Recipe Ingredients for French Tomato and Zucchini Casserole

2 small zucchini, sliced crosswise
3 T. Olive Oil
10 ounce tomatoes
1 T. green chilies
1 T. garlic, minced
2 t. chopped dill
1 Salt and pepper
6 ounce feta cheese, crumbled

Recipe Directions for French Tomato and Zucchini Casserole

  1. Slice zucchini crosswise and toss in olive oil.

  2. Spread in an even layer in glass or ceramic baking dish.

  3. Season with salt and pepper.

  4. Scatter feta on top.

  5. Cover with tomatoes.

  6. Drizzle remaining olive oil on top.

  7. Bake at 425 degrees for about 40 minutes or until liquid is absorbed and zuchinni is sizzling.
