Recipe Ingredients for French Potato Salad (Ina Garten)

16 oz Potatoes, White, Flesh And Skin
16 oz Potatoes, Red, Flesh And Skin
1 fl oz Wine, Table, White
1 oz Chicken Stock
1 serving Vinegar
0.5 tsp Classic Dijon Mustard
0.5 tsp Kosher Salt
0.75 tsp Pepper, Black
10 tbsp Extra Virgin Olive Oil
0.25 cup, chopped Onions, Spring Or Scallions
5 sprigs Dill Weed, Fresh
2 tbsp Parsley
2 tbsp Basil, Fresh

Recipe Directions for French Potato Salad (Ina Garten)

  1. *Notes on measurments. the fresh herbs, it calls for 2 tablespoons of each.

  2. Drop the white and red potatoes into a large pot of boiling salted water and cook for 20-30 minutes until they are just cooked through. Drain in a colander and place a towel over the potatoes to allow them to steam for 10 more minutes. AS soon as you can handle them, cut in 1/2 (quarters if potatoes are larger) and place in a medium bowl. Toss gently with the wine and chicken stock. Allow the liquids ot soak into the warm potatoes before proceeding.

  3. Combine the vinegar, mustard, 1/2 teaspon salt, and 1/4 teaspoon pepper and slowly whisk in the olive oil to make an emulsion. Add the vinaigrette to the potatoes. Add the scallions, dill, parsley, basil 1 1/2 teaspoons salt, 1/2 teaspoon pepper and toss. Serve warm or at room temp.
