From the Joy of Cooking Cookbook, these are like a crepe, but easy to make, like a pancake. Add fresh fruit and lite maple syrup for a yummy breakfast that kids love!

Recipe Ingredients for French Pancackes

3/4 cup flour
1 tsp baking powder
1/2 tsp salt
2 tbsp icing sugar
2 eggs
2/3 cup milk
1/2 tsp vanilla
1/3 cup water

Recipe Directions for French Pancackes

  1. Sift together the dry ingredients into a bowl.

  2. In a second bowl, combine the eggs, milk, vanilla and water.

  3. Pour the wet ingredients into the dry and whisk together so that all of the dry ingredients are covered. Do not worry if you have lumps, they will come out in the cooking process.

  4. Heat the griddle/pan to medium heat and pour the batter into the pan, making whatever size you desire.

  5. Leave on the pan until there are lots of little bubbles on the upside of the pancake.

  6. Flip and cook on the other side until golden brown.

  7. Serve.
