Home made Oven broiled French Onion Soup

Recipe Ingredients for French Onion Soup

5 large sweet onions
5 large red onions
1 tbs salt
3 tbs butter
10 oz white wine
10 oz low sodium beef broth
10 oz low sodium chicken broth
10 oz apple cider
4 slices french bread
8 oz gruyere cheese
1 tbs dry parsley

Recipe Directions for French Onion Soup

  1. Cut onions in half and cut thin slices.

  2. Melt butter in a saucepan, layer onions and salt and sweat over medium heat.

  3. Do not touch for the first 15 minutes. Slight burning is OK

  4. After the initial turning. turn over the onions every ten minutes, until the onions are dark mahogany color (45-60 minutes).

  5. Add the wine and increase heat for ten minutes until it is reduced to about two cups.

  6. Add the chicken and beef broths and cider and let simmer on low heat for 20-40 minutes.

  7. Season with pepper and dry parsley

  8. Serving:

  9. Toast the french bread in oven.

  10. Put the hot soup in an oven safe crocks leaving one inch to the top-

  11. Place the toasted bread on top of the soup.

  12. Put on top of the toasted bread one oz of grated Gruyere cheese

  13. Put the crock/s on a baking sheet and place under the broiler for 1-2 minutes until the cheese melts and bubbly.
