chop all ingredients well and mince garlic, chives, rosemary to taste. Throw it into a very large cooking pot on the stove at medium heat for 1 hour. Stir and season to taste (salt, peppercorn, thyme, garlic powder are all good additions). Reduce heat to low and cook for another hour (for meatier soup, leave the lid off, for brothier soup, you may choose to add water and keep the lid on). It is ready to serve! My favorite cheese for this recipe is havana or swiss!

64 oz beef broth
1 large white onion
1 large yellow onion
1/2 red onion
1 large green pepper
2 cloves garlic
2 oz chives
2 oz rosemary
12 oz roast beef
