The best! The garlic is optional, but adding it actually makes the soup sweeter and not at all garlicky.

Recipe Ingredients for French Onion Soup Gratinee

6 large onions
15 cloves garlic (optional, but use it!)
1 1/2 t sugar
1 tbsp olive oil
1 t butter
2 servings dry sherry (1/4 cup)
1/2 t dried thyme (1 1/2 t fresh)
2 t tomato paste (ketchup better!)
1/2 t ground black pepper
7 c beef bouillon
1/2 c grated gruyere (mozzarella better)
6 slices french bread (plain croutons better)

Recipe Directions for French Onion Soup Gratinee

  1. Slice onions & garlic vertically. Saute slowly in oil, butter and sugar until well browned. Add sherry to onions and use liquid to scrape up the browned glaze on the bottom of the pot. Also use a bit of water if necessary to get it all. All of the glaze must be blended into the onions.

  2. Add remaining ingredients except bread and cheese and simmer, covered, about 30-45 mins.

  3. Put bread in bottom of oven-proof soup dishes. Pour on soup. Sprinkle with cheese and broil 5-10 mins until cheese is melted and very, very slightly browned.

  4. Sprinkle with a little parsley if you like and serve.
