Recipe Ingredients for French Oinion Soup

3 cans (14 1/2 oz) Beef Broth
4 cups sliced onions
3 cloves minced garlic
2 tbs smart balance spread
1/4 cup white wine
1/2 tsp thyme
4 slices of light bread
4 slices Reduced Fat Swiss Cheese

Recipe Directions for French Oinion Soup

  1. Melt smart balance over medium heat. Add the onions and cook, stirring frequently. Let the onions brown thoroughly. As they cook and caramelize stir well to keep them from sticking to the bottom of the pan or burning. Add garlic and thyme about 5 minutes in.

  2. When the onions are soft and well caramelized (about 15 minutes) add white wine and beef broth. Stir well scraping all the brown from the bottom of the pan. Taste and adjust seasoning, adding salt and pepper if neccessary. Reduce the heat to low.

  3. ** Lazy version:** Toast bread in a toaster or toaster oven till light browed. Place hot suop in bowls and top with cheese, wait a minute or two for it to melt a bit and top with bread, torn into bite sized bits.

  4. **Traditional version** Cut bread into squares and toast the bread in a 350F oven. Let them cook for about 5 - 10 minutes.

  5. Put soup into 4 oven-safe bowls. Place one slice bread on top of soup for each bowl, and then place a slice of cheese over bread to cover. No need to dangle the cheese over the side, this is hard to clean and wastes precious cheese.

  6. Put in 375 degree oven until cheese is bubbling and brown.
