Note: * Soaking Lentils for several hours before hand can reduce cooking time. * You can use a bay leaf to lift soup * Leeks can substitute Onions * You can also choose not to puree soup * You can garnish with thyme and parsley

Recipe Ingredients for French Lentil Soup

3 tablespoons extra virgin olive oil
2 cups chopped onions
1 cup chopped chopped celery
1 cup chopped carrots
2 garlic cloves, chopped
4 cups (or more) vegetable broth
1 1/4 cups lentils, rinsed, drained
14 1/2 ounce diced tomatoes in juice (can)
1 teaspoon Balsamic vinegar (optional)
2 tablespoons plain yogurt (optional)

Recipe Directions for French Lentil Soup

  1. Heat oil in heavy large saucepan over medium?high heat.

  2. Sauté onions, celery (set aside leaves for garnish), carrots, and garlic until vegetables begin to brown, about 15 minutes.

  3. Add broth, lentils, and tomatoes with juice and bring to boil.

  4. Reduce heat to medium?low, cover, and simmer until lentils are tender, about 35 minutes.

  5. Transfer soup to blender and puree until smooth.

  6. Return puree to pan; thin soup with more broth if too thick.

  7. Season with salt, pepper, and a splash of vinegar or yogurt, if desired. Ladle soup into bowls.

  8. Garnish with celery leaves
