Vegetarian lentil soup with chunky carrots and French Puy lentils

Recipe Ingredients for French Lentil Soup

2 cup Lentils, Mature Seeds
1 3/4 cup Diced Tomatoes No Salt Added
3 medium raw Carrots
1/2 medium Yellow Onions
2 clove Garlic
3 tsp Fresh Thyme
2 tbsp Olive Oil, Extra Virgin
2 tsp Pepper, Black
2 tsp Paprika
6 teaspoon Worcestershire Sauce
2 tsp Sea Salt Flakes

Recipe Directions for French Lentil Soup

  1. Peel and cut carrots diagonally about 1/4 inch thick. Peel and mince garlic. Dice fresh herbs. Chop onion. Add oil to large pot over medium heat. Sauté onions and carrots until they start to brown a little. Add tomatoes, garlic, thyme, and paprika. Stir and cook covered for a few minutes. Then add water, Worcestershire sauce, lentils, salt and pepper. Cover and bring to a boil.

  2. Once soup is boiling, uncover and reduce heat to a simmer for 45 minutes ? 1 hour or until lentils are tender.

  3. If the soup looks too thin, uncover and simmer for a couple more minutes. If it looks too thick, add a touch more water.
