Translated from a French recipe. This is a half recipe since I don't like a lot of desserts hanging around, cause I'll eat them. Just double everything (except use 5 eggs) for a full recipe. This becomes a lemon curd that can be used for a lemon meringue pie. The secret to the recipe is just to keep beating and stirring. I'm going to keep tweaking this recipe, progressively replacing more sugar with splenda.

Recipe Ingredients for French Lemon creme dessert (Lactose free)

1 fruit without seeds Lemons
1 tbsp Corn Starch
125 grams Water
70 grams Sugars, Granulated
3 packet SPLENDA No Calorie
2 egg Medium

Recipe Directions for French Lemon creme dessert (Lactose free)

  1. Remove zest from lemon and squeeze out all juice (minus seeds)

  2. put aside

  3. Put water on to boil

  4. While waiting for water to boil, beat eggs, adding sugar and splenda bit by bit

  5. When the mixture is a little moussey, add tablespoon of Maizena, the zest and the lemon juice

  6. Keep beating

  7. Add boiling water progressively while beating

  8. Put mixture in a pot and cook on stove on low for a few minutes.

  9. Make sure to keep stirring

  10. The mixture will start to get firm (like a pudding).

  11. Take off stove and continue to stir while it cools. Keep at it until its lukewarm

  12. (Optional: for a more mousse-like texture, beat an egg white separately and fold into the mixture when completely cool, you don't want to cook the egg)

  13. Put lemon cream mixture in the fridge. Beat again before serving.

  14. Serve cold.
