basic crusty bread add herbs or spices to alter flavor, even cheddar or parmesan

Recipe Ingredients for french bread

6 cups flour
2 1/2 tsp yeast
1 1/2 tsp salt
2 cups warm water, (more if using bread flour)
1 tablespoon cornmeal
1 ounce gluten, (can omit if using all bread flour)

Recipe Directions for french bread

  1. using most of water and half flour and all yeast, beat mixture together

  2. add salt and beat

  3. change to dough hook or wooden sooon and add rest of flour as needed and gluten if using

  4. finish kneading by hand until smooth and stretchy

  5. allow to sit 10 minutes

  6. divide in half and form into large rectangles, then roll up as a log, seal seam with water and allow to rise, seam down, for about 30-40 minutes, and oven is good and hot

  7. cut a few diagonal vents in top

  8. *important for crusty bread:

  9. lightly oil a pan and sprinkle with cornmeal

  10. transfer bread to pan

  11. put in moderate-hot oven, (375), and just before closing the door toss about 1/8 cup water into oven

  12. trap the steam to make crusty bread, omit for softer crusts

  13. bake about 20 minutes
