Recipe Ingredients for French Bread

7 cups all purpose flour
3 tbsp vital gluten flour
2 1/2 cups water
4 1/2 tsp active dry yeast
1/4 cup water
1 tsp sugar
1 tbsp salt
1 tbsp butter

Recipe Directions for French Bread

  1. Proof yeast in 1/4 c warm water and 1 tsp sugar for 10 minutes. In the mean time, stir together 2 cups flour, all of the vital gluten flour, and salt. Grease a large bowl. Warm the 2 1/2 cups water.

  2. Stir warm water, butter, and proofed yeast into flour. Vigorously beat the batter with a wooden spoon for about 2 minutes until smooth. Gradually add remaining flour until the dough is a workable, soft mass.

  3. Knead the dough for at least 10 minutes on a lightly floured surface. Move dough to a greased bowl, turning to grease all sides, and let rise in a warm damp place, covered lightly to prevent it from drying out. Let dough double in size, about 1 hour.

  4. Punch dough down and divide into 3 balls. Roll each into a rectangle about 1/4" thick, then roll up from the long end into a loaf. Pinch the seam together and fold in the ends. Place seam down on baking sheet lined with parchment paper or dusted with cornmeal and flour. Let rise, covered with greased wax paper, plastic wrap, or a towel for one hour or until doubled in size.

  5. Make 3 or 4 diagonal slashes in the top of the loaves, and dust with kosher salt. Bake for 25 to 30 minutes at 450F or until loaves are golden brown and sound hollow when thumped on the bottom.
