Recipe Ingredients for French Bread (half of Kitchen Aid recipe)

1 package active yeast
1 1/4 cups water (warm)
1/2 tbs salt
1/2 tbs margarine
3 1/2 cups all purpose flour
1 tsp flour

Recipe Directions for French Bread (half of Kitchen Aid recipe)

  1. dissolve yeast in warm water in warmed mixer bowl

  2. add salt butter and flour

  3. attach bowl and dough hook to mixer

  4. speed 2 mix about 1 minute

  5. knead on speed 2 about 2 minutes longer (dough will be sticky)

  6. place dough in greased bowl, turning to grease top.

  7. cover

  8. let rise in warm place free from draft 1 hour or until doubled in bulk

  9. punch dough down and divide in half.

  10. roll each half into rectangle

  11. roll tightly from longest side, tapering ends if desired

  12. place loaves on greased baking sheet dusted with cornmeal (or flour)

  13. cover

  14. let rise in warm place free from draft 1 hour or until doubled in bulk

  15. with sharp knife make 4 diagonal cuts on top of each loaf

  16. bake at 450 for 25 min

  17. remove from oven

  18. optional: beat egg white and water together with a fork (1 egg white + 1tbs cold water) brush each loaf with optional egg mixture and return to oven and bake 5-10 minutes

  19. remove from making sheets immediately and cool on wire racks.
