Recipe Ingredients for French Bread (BH)

3 cups unbleached flour
1 cup warm water
1 package active yeast
3/4 tsp salt

Recipe Directions for French Bread (BH)

  1. In a large mixing bowl combine 1 cup flour, the yeast, and 3/4 tsp salt. Add warm water. Beat with an electric mixer on low speed for 30 seconds, scraping bowl constantly. Beat on high speed for 3 min. Using a spoon, stir in as much remaining flour as you can.

  2. Turn onto lightly floured surface. Knead in enough flour to make a stiff dough that is smooth and elastic (8-10 min) shape into a ball. Place in a greased bowl; turn once to grease surface. Cover; let rise in a warm place till double (about 1 hour).

  3. Punch down. Turn out onto a lightly floured surface. Let rest for 10 min. Roll into a 15x10 inch rectangle. Roll up from long side; seal well. Place seam side down, on a greased baking sheet sprinkled with cornmeal. Combine egg white and water; brush over loaf.

  4. Cover; let rise till nearly double(35-40) min. With a sharp knife, make 3or 4 diagonal cuts about 1/4 inch deep across top of each loaf.

  5. Bake at 375* for 20 min. Brush again with egg ehite and water mixture. Continue baking for 15 to 20 min. more or till brad tests done. Remove from baking sheet; cool. 16 servings
