From "Artisan Bread in Five Minutes a Day." Makes 4, 1 pound loaves.

Recipe Ingredients for French Boule Master Recipe

3 cups water
1 1/2 tbsp yeast
1 1/2 tbsp kosher salt
6 1/2 cups all-purpose flour, unbleached
4 tbsp cornmeal

Recipe Directions for French Boule Master Recipe

  1. Stir yeast and salt into 3 cups luke-warm water.

  2. Stir in 6.5 cups of non-sifted/non-compacted flour. Mix until dough is uniformly moist with no dry patches.

  3. Cover and let rise for two hours or until dough begins to collapse. Use a container that is big enough for the dough to double(5qt should do it) and won't explode from gasses.

  4. Refrigerate overnight.

  5. Cut off 1 lb. piece of dough(grapefruit size) and cloak in flour. Form your loaf and let rise for 40 minutes

  6. Preaheat oven with baking stone/sheet to 450F 20 minutes prior to baking.

  7. Dust top of loaf with flour and slash with bread knife.

  8. Use pizza peel dusted with cornmeal to put loaf in/out of oven.

  9. Pour 1 cup hot water in broiler pan under sheet/stone.

  10. Bake 30 minutes.

  11. Cool on wire rack.

  12. Refrigerate remaining dough for up to 14 days.
