French Bean Salad-Barefoot Contessa

Recipe Ingredients for French Bean Salad-Barefoot Contessa

4 cup Beans, Snap, Green
1 medium (approx 2-3/4" long, 2-1/2" dia) Peppers, Sweet, Red
1 medium Orange Hothouse Bell Pepper
1 cup chopped Red Onion

Recipe Directions for French Bean Salad-Barefoot Contessa

  1. Trim beans and par boil for 4 minutes, then put into ice water to stop beans from cooking.

  2. Chop Peppers and Red Onion. Mix peppers and onion on bowl with olive oil, tsp of salt and pepper. Lay out on cooky sheet and roast for 15 minutes. Let cool.

  3. Place beans in saute pan with olive oil and peppers and onion and heat through and serve.
