Homemade freezer chicken pot pie! This recipe makes 2 9 inch pies!

Recipe Ingredients for Freezer Chicken Pot Pie

2 cups Potatoes, diced & peeled
1 cups sliced carrots
2/3 cup chopped onion
1 cup butter, cubed
1 cup all purpose flour
1 3/4 tsp salt
1 tsp dried thyme
3/4 tsp pepper
3 cups chicken broth
1 1/2 cups milk
4 cups cooked chicken
1 cup frozen peas
1 cup frozen corn
4 pie crusts

Recipe Directions for Freezer Chicken Pot Pie

  1. Place potatoes & carrots in a large soucepan; cover with water and bring to a boil. Reduce heat; cover and simmer for 8-10 minutes or until crisp-tender. Drain & set aside.

  2. In a large skillet, saute onion in butter intil tender. Stir in the flour, salt, thyme, & pepper until well blended. Gradually stir in broth and milk. Bring to a boil; cook & stir for 2 minutes or until thickened. Add the chicken, peas, corn, potatoes & carrots. Remove from heat.

  3. Line two 9 inch pie plates with bottom pie crusts; trim crust even with edge. fill crust with chicken mixture. Roll out remianing crusts and to fit top of pies. Cut slits or decorative cutouts in crust top. Place over filling; trim, seal & flute edges.

  4. Bake one pot pie at 425 degrees for 30-40 minutes or unitl crust is lightly golden. Let stand for 15 minutes before cutting. Cover & freeze remaining potpie for up to 3 months.

  5. *TO USE FROZEN POT PIE: Shield frozen pie crust with foil; place on a baking sheet. Bake at 425 degrees for 30 minutes. Reduce heat to 350 degrees; bake 70-80 minutes longer or until crust is golden brown.

  6. YIELD: 2 Potpies (6-8 servings each)
