handmade free form summer fruit tart; can use berries, other stone fruit

Recipe Ingredients for Freeform Peach Tart

1 1/2 cups all-purpose flour
1/2 tsp salt
10 tbsp unsalted butter, cold
4 tbsp water
3 cups peaches, sliced
1 tsp sugar

Recipe Directions for Freeform Peach Tart

  1. Pulse flour with salt in food processor to combine; add butter in 1/2 squares, pulsing 10-12 times. Add 3-6 tbsp of water until dough forms small curds.

  2. Turn out onto counter and use heel of hand to smear 1/6 of dough into small sheets. Collect and repeat. Form dough into a 4in disk, wrap in plastic and refridgerate for at least 1 hour.

  3. Prepare fruit in meantime.

  4. Remove dough, let sit for 15 min until pliable. Place on parchment paper with flour for dusting. Roll out to 12" circle, 3/8" thick. Dust with flour as needed. Cool in fridge for 10-15 min.

  5. Pile fruit in middle of circle, leave 2 1/2" border. Carefully fold up edge of dough over 2" of fruit, leaving a 0.5" crust at bottom and pinch together layers of dough. Brush with water and sprinkle with sugar.

  6. Bake at 400 degrees 50-55min. Cool on pan 10 min, move to wire for 30min.
