A healthy, heavy quick bread, almost like fruit cake. Buttermilk adds levening power. Best toasted

Recipe Ingredients for Fred's Bread

4 cups flour
2 cups rolled oats
1 cup corn meal
1 cup wheat germ
2 teaspoons baking soda
1 quart buttermilk
1/2 cup honey
1/2 cup molasses
1 egg
1 cup raisins
1 cup pecans

Recipe Directions for Fred's Bread

  1. Preheat oven to 325

  2. Grease 2 bread pans very well.

  3. In a large bowl, mix dry ingredients

  4. Add raisins and nuts and mix to separate

  5. In a separate large bowl, wisk the egg

  6. Mix in wet ingredients.

  7. Add wet to dry, stir well.

  8. Bake at 325 for 1 1/4 hours.

  9. Cool in pans.

  10. Wrap tightly in foil to preserve moisture.
