Frank's Brisket Point Chili Recipe

I make this with the point of a smoked brisket. Best use for a smoked briket point I have found. I use a variety of chiles, mostly Hatch with a couple of smo;ed jalapenos and an habenero or two. Careful, not for the faint of heart! Note that serving size is to get the nutrients/calories per 100 grams.

Recipe Ingredients for Frank's Brisket Point Chili

1 1/2 lbs brisket point (cooked)
1 Onion
2 T Canola Oil
8 Peppers (dried red chiles)
6 cloves garlic
2 t red chili powder
4 t Cumin
1 t Coriander, ground
1 t Oregano
2 t salt
28 oz crushed tomatoes
2 1/2 c Chicken Stock

Recipe Directions for Frank's Brisket Point Chili

  1. Soak stemmed and seeded dried chiles in hot water ontil soft, about 20 to 30 minutes; retain water if not bitter.

  2. Puree chiles and garlic in blender with reserved water.

  3. Saute onions in dutch oven or pot with oil, 3t Cumin and red chili powder.

  4. Add pureed chiles (strain to remove excess skins and seeds), tomatoes, 1t Cumin, coriander, oregano, salt and stock; simmer for 45 minutes to 1 hour.

  5. Chop brisket into 1/2" cubes and add to pot; simmer for 30 minutes.

  6. Check for heat level; add cayenne pepper if more heat desired; add salt if desired.

  7. Serve with tortillas.
