Recipe Ingredients for Frangipan Tart

2 1/2 oz margarine
5 oz plain flour
3 apricots, finely chopped
4 oz margarine
4 oz caster sugar
2 eggs, lightly beaten
4 oz ground almonds
1/2 tsp orange rind, finely grated

Recipe Directions for Frangipan Tart

  1. Make pastry from the flour & 2.5 oz margarine

  2. Heat oven to 190C/375F/Gas Mark 5

  3. Lightly grease 20cm/8in flan or sandwich tin with a loose base

  4. Roll out pastry and line tin

  5. mix the apricots and orange zest together, and sprinkle over the base of the pastry case

  6. Beat the margarine with the sugar until pale and fluffy.

  7. Beat in the eggs, a little at a time, then stir in the ground almonds.

  8. Spoon mixture into pasty case and level.

  9. Bake in oven for around 40 minutes until filling is set and browned.

  10. Leave to cool in tin for 10 - 15 minutes

  11. Serve when ready...
