Recipe Ingredients for Foxriver's, Las Vegas Turkey Pie

1 lb ground turkey
1 onion, chopped
4 slices turkey bacon (chopped small)
4 oz mushrooms, sliced
2 cups water (or home made chicken stock)
1 tbsp whole grain flour (as thickener)
1 dash black pepper
1 tsp olive oil
1 dash garlic salt
1 oz shredded cheese (as topping)
1/2 cup 2% milk
3 lbs potatoes
1 dash salt
1 dash black pepper

Recipe Directions for Foxriver's, Las Vegas Turkey Pie

  1. Scrub and chop potatoes (leave skin on).

  2. Bring pot of water to boil, add potatoes and cook until tender.

  3. Drain cooked potatoes, add milk and seasoning, mash potato leaving it a little chunky (or whip until smooth- but this tends to make final result rather sloppy). Set potato aside.

  4. Chop onion, saute until soft in olive oil, add drained mushrooms (or fresh ones) and chopped turkey bacon.

  5. Cook until mushrooms are slightly browned and bacon is cooked through. Add dash of black pepper.

  6. Add ground turkey and cook until meat changes color breaking up as it cooks.

  7. Add flour to thicken juices, a little seasoning (easy on the salt)

  8. Add unsalted chicken stock or water.

  9. Simmer until cooked through and juices thickened/ reduced.

  10. Tip meat mixture into oven proof dish and spread evenly on bottom.

  11. Top with mashed potato spread evenly and sprinkle with shredded cheese.

  12. Bake in preheated oven 350 degrees, for 45- 50 minutes (until potato is golden brown).
