Recipe Ingredients for Four-Grain Bread

2 c. boiling water
1 T. salt
2 T. vegetable oil or margarine
2 T. molasses
1 c. cornmeal, preferably stone ground
1 c. rolled oats, old-fashioned
2 pkg. yeast
1/2 c. warm water
2 c. whole wheat flour
1 c. rye flour
1 c. unbleached white flour (approximately)

Recipe Directions for Four-Grain Bread

Combine boiling water, salt, shortening, molasses, cornmeal, and oats in a large bowl and let stand until lukewarm. Soften the yeast in warm water and after about 10 minutes, add to lukewarm cornmeal mixture. Stir in wheat and rye flours, and add enough white flour to make a stiff dough that pulls away from the side of the bowl. Turn onto a floured board and knead until smooth (about 5 to 7 minutes). Return to bowl, cover with moist cloth or plastic, and let rise until doubled in bulk (1 to 1 1/2 hours). Knead briefly, divide into halves, and form 2 loaves ( either round or long). Place on a greased cookie sheet sprinkled with cornmeal, cover with moist cloth or plastic, and let rise until doubled (about 30 minutes). Bake for 45 minutes at 375 degrees F.
