How do you make a really low cal pizza? Any ideaz?

Looking for a way to make a really low calorie pizza.  Different crust ideas, toppings whatever.  I'm craving pizza and want to make one for tomorrow.

ooo, I made one recently with pita bread, pulled it apart (64 cals) used some pizza sauce (30 cals) and used enough cheese to make it a 200 cal pizza. Tres yum! I have a huge pizza fetish and I wasn't disappointed :)
Put pizza toppings on a large portabella mushroom and bake at 450 until bubbling.
I recently found these tortillas called Smart Tortillas - 160 cal for a large one.  I wonder if I could use it as a crust?
I found some large (8in) low carb tortillas that are 80 cal.  I wanted to use them as a pizza base.  Do you like veggie pizza?  Mushrooms, onion, green pepper... low cal toppings.  ;)  Kelly
Yes I love veggie pizzas.  I tried those low carb tortillas but I'm not fussy on them. I find they are kind of rubbery and they taste funny...but that's just me. :)
Oh! Low cal pizza! i was craving the same thing the other day!

Knowing some about pizza... i decided to make one more in line with italian (they are a lot more simple over there...not the pizza hut stuff here, more showcasing the ingredients in a straightforward manner).

Anyhow...first the dough!

A cup of flour.... half a packet of yeast (wake it up in warm water, 1/2 to 3/4 a cup, add to dough also, i like a more moist dough...easier to work with, just use flour to keep it from sticking )...pinch or two of sugar and salt and... ! The dough of pizza is normally with oil, but really you dont need it (and i dont notice it gone). Other then that, its just bread....knead until you have a nice dough with enough gluten and set to rise for 1-2 hours (depends how impatient you are... you should let it rise 1 hour, punch down and let rise another hour in a warm place covered).

Anyway... once you have that, cut it in half and work each one into really think (as thin as you can) pizzas! Should cover a good amount of space (can also keep it as one and do one large pizza).

Now that has 400 calories for the dough....the real issue comes in with the topping!

2 or 3 tomatoes, parsley, celantro, mushrooms, and any other spices you have hanging around (maybe some garlic)

In a blender chop up 1 and 1/2 tomatoes, add a bunch of parsley and celantro, and any other spices you think smell good (garlic too if you like it). This makes a really nice pizza sauce, really low calorie also (seeing as a lot of it is tomatoes and herbs).

Then, put the sauce on the pizza and start loading it up with slices mushrooms (hardly any calories at all), more celantro and parsley, some sliced tomatoes, and then maybe some meat (chopped up chicken breast is fine, or some sliced meat from the deli even works).

Then cook it! At around 370 (the dough cooks fast because its thin, and the others dont really need to cook much). Make sure the pan is lightly oiled (pam is fine).

When all is said and done, you have a pizza that tastes really fresh and has 400+80 (tomatoes) about 500-600? for a large pizza (or 2 smaller ones!).

The main issue is the dough calories... other then making it very thin, i havent found a way around it. Flour just has 100 calories per 1/4 cup no matter what you do hehe.

Its not the same greasy pizza hut stuff, but tastes a lot better in my opinion. (you can even play around with the toppings, adding lemon juice or anything you feel like... cucumber, eggplant, really anything).

Also note you are skipping the cheese (tons of calories!)...if you really "need" cheese...a little bit might be ok, but it can easily double the calories if you arent careful. But i say try it without first, the fresh taste really is good.

Thomas English Muffins come in a multi grain low fat version that is 100 calories.  You can toast them and then top them and run under the broiler.  If you use low fat cheese you should be able to keep the calories at under 250 for the two little pizzas.

I have had good luck placing one of those garlic-herb tortillas flat on a cookie sheet under the broiler for just a minute or two until it gets crisp (watch it like a HAWK) and then spreading a scant tablespoon of tomato paste on it.

I top with assorted steamed veggies, a heavy dose of garlic, and a sprinkle of fat free mozzarella.  I microwave or pop it back under the broiler to melt the cheese.  (Be very careful if you put it back under the broiler, the tortilla burns fast.)

However, that said, the whole wheat crust south beach pizzas clock in at about 350 calories for a personal size one and are pretty filling and satisfying.  I think Lean Cuisine has some good freezer pizzas too.  You might want to add some fresh vegetables on top of what they do, but I think you could get a pretty fancy pizza for under 400.
i agree with ellybell, you have to make the tortilla crispy before you add the toppings or else its kind of gross.

i like mine with sun dried tomatos instead of any bacon or still adds a nice tasty bite.

I do the pita bread or tortilla thing but use a "sauce" made out of ff sour cream, old bay seasoning and stone ground mustard. This sauce is killer with a seafood pizza...shrimp had practically no fat and the same for "krab". Top with green onions, shrimp, krab, and whatever veggies you'd like. I just sprinkle on a little low fat parmesan or mozzarella.

Another yummy alternative to the cheese is to use FF lo cal ricotta cheese mixed into a red sauce.
This is a variation on one I found in Cooking Light.

            Barbequed chicken pizza

Use one large wheat  Boboli as the base.

Crispy fry a few pieces of bacon. Drain well on paper towels and crumble. (This bacon is just to add flavor without too much fat.) Reserve for later.

Fry up an onion sliced into 1/4 inch thick  rings. Just stir fry over low heat in a Pam sprayed non-stick until it's soft.
Spread up to 1/2  inch from edge of Boboli with barbeque sauce of your choice. Sprinkle with pre-cooked chicken (like you get in plastic bags in the deli section of  refrigerated foods), the onion rings and the bacon crumbs. Cover with part skim mozzerella and cook at 350 on a pizza pan until bubbly.

My kids and husband liked this even after they learned it was healthy.
I eat the lean cuisine brick oven style mushroom pizza -- it's under 300 calories and very yummy. It has a cream sauce, so I add some diced tomatoes to it. =)

robbie615 -  may be a silly question but here goes....what is Boboli? Is it like a tortilla, flat bread??
My husband's recipe for dough is here. It may not be low calorie enough for some of you, but it's homemade, which means no extra junk that's usually added. If you make a pizza out of it, cutting it into 8 slices (once up, once across, and both diagonals) will match it match the nutrition info, making it 121 calories per piece (bread only!). Do your added ingredients separately, though, like sauce. That's not included. Two pieces are enough to fill me up.

That day he used basically half whole grain wheat flour and half unbleached flour. You could use all whole grain and it would be even better for you (we ran out).

Also, in place of the water, try the same amount of V8 or beer (yes, beer). You'd have to recalculate, of course. And another oil can be used in place of the olive oil.

I don't suggest using Splenda in place of the sugar, though. Splenda makes baked goods a bit ... fluffy? In this case, unless you know how much to use, I'd stick with sugar. Though you can decrease the amount if necessary.

Go cheese-less! Sautee onions and mushrooms in red wine vinegar. Take a SMALL amount of tomato sauce (maybe with oregano and basil mixed in?) and coat the dough with it lightly. Then add a layer of the mushrooms and onions. When it bakes, the tomato sauce will bake into the pizza, so it will be a nice coating on the bread. Maybe a few small cheese pieces sprinkled at random for a flavor kick every few bites, but that's not really needed.
i'm with bkwrm on the flat out bread and hormel pepperoni, depending on what type of sauce/cheese you get it's not very caloric at all
One time I made pizza with just the pizza dough + marinara sauce + chopped, grilled veggies on top.  You can also buy cheeseless veggie frozen pizza at most grocery stores - I know we have them at Savemart here in Cali.  It's, ironically enough, across from the ice cream.  haha  1/3 pizza is like 250 calories..  awesome!
You know, pizza hut veggie pizza is actually really good without the cheese...
