Does anyone have any good recipes in which i can use a bunch of bananas that are going bad? No one is eating them and its a shame to throw them away!
You can put them in the freezer and pull one out at a time when you want to make a banana smoothie. Yummy!
I was also thinking smoothie. Or banana pancakes!
You can freeze them. The skins will get all black and disgusting, but the fruit inside will be fine. You can then use them for things like smoothies and banana bread -- and it won't matter that they are mushy/soft

Yummy!! I LOVE baking with bananas and have two downstairs I plan on tackling today. Here's a couple recipes from my Red Mill cookbook that are fairly healthy and very high in fiber. All the bran, flour, flax products are available by Red Mill if your store carries that brand.
Banana Flax Bread
1 1/2 c. unbleached, white flour
1/4 c. hard white whole wheat flour
3/4 c. golden flaxseed meal
1 tsp. ground cinnamon
3/4 c. sugar
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp salt
1/3 c. walnuts, chopped
1/3 c. vegetable oil
3 medium bananas, very ripe, peeled and mashed to a pulp
Preheat oven to 350. Grease two 9x5 inch loaf pans or line them with parchment paper. Combine the flours, flaxseed meal, cinnamon, sugar, baking powder, baking soda, and salt in medium bowl. Stir in the nuts. In a large bowl, beat together eggs and oil. Add 1/2 the dry ingredients and then add mashed bananas, combining well. Add the remaining dry ingredients to moisten. Pour batter into pans and check after 45 minutes. Bake until golden brown and tester comes out clean.
Banana-Bran Nut Muffins
1 1/4 c . wheat bran
1 c. whole wheat flour
1/4 c. whole wheat pastry flour
1 tsp. baking powder
1 1/2 tsp. baking soda
1/2 tsp. salt
1/4 c. brown sugar, packed
3/4 c. walnuts, chopped
2 tbsp. vegetable oil
1 1/4 c. plain yogurt
1 overripe banana, peeled and mashed
Preheat oven to 400. Butter or oil a 12 c. muffin tin or line with cupcake liners. In a large bowl, combine the bran, flours, baking powder, baking soda, salt, brown sugar and walnuts. Stir until well mixed. Process the oil, yogurt, and banana in a food processor or blender until well mixed. Pour into dry ingredients and stir until just moistened. Spoon the batter into muffin cups and bake 15-20 minutes or until tester comes out clean.
Fat free banana breads and muffins, or even a cake
milkshakes and smoothies, or softserve ice cream [VERY good]
if you freeze them they taste good with a little peanut butter all on its own :)
to make fake soft-serve icecream from bananas you:
freeze them overnight,
put 1/2 frozen banana in a blender with 3-4 ice cubes, 1/2 tsp vanilla, 1/2 tsp cinnamon and 1/2 cup of any kind of milk and blend as much as oyu want, it looks and tastes like a dairy queen blizzard :)
Sweet Potato & Banana Casserole
Now you may want to swap out the butter for a better choice. This is great with the butter, but I am sworn to say I don't use butter in my version. (LIAR) and with your bananas you won't have to put them in the oven long, if at all.
10 sweet potato
6 tablespoon butter
1/4 cup honey
1/4 cup brown sugar
1/2 cup pecans, chopped
1/4 cup flour
Preheat over to 400
Pierce potatoes with fork all over. Place on a pan in the oven for 40 minutes or until soft. After 30 minutes, add the bananas to the pan and cook for 10-15 minutes or until browned. Remove and allow them to cool.
Scoop sweet potatoes form the skins into a large bowl. Add the peeled bananas, 4 tablespoons of butter & honey. Season with salt and whip with a wooden spoon until well combined & fluffy. Transfer to a casserole bowl.
In a small bowl combine remaining butter, brown sugar, flour & pecans to form crumbs. Sprinkle oven the sweet potatoes and heat in the oven until the crumbs are golden.
By far the best banana muffin recipe I have ever tasted. So easy to make and short on the ingredient list too. 200 calories / muffin. Probably could be just as good cutting back on some of that sugar if the banana's are fairly ripe.
banana+coconut milk+almond milk=yum
If you have any baking to do - mash them up and use them instead of butter or oil ... it will change the texture a bit but muffins/cakes will be super moist! You can also reduce the amount of sugar a bit too ...
Try searching for some banana bread recipes. I believe very ripe bananas are used in banana bread.
to make a normal recipe healthier, use flax seed with your flour and use splenda instead of sugar.

basically anything that you'd bake with eggs can be made with bananas. It's a vegan substitute.
Make a nice big loaf of banana bread, slice it up and put it in the freezer so you can pull it out when you want to eat it.
Make banana bread! There are a ton of good recipes. Also, I have this recipe that uses bananas instead of oil and eggs to make cookies. I'll see if I can find it for you.

Found it! Healthy chocolate chip cookies:
- 2 1/4 cup whole wheat flour
- 1 tsp baking soda
- 1 cup nonhydrygonated butter, softened
- 3/4 cup white sugar
- 3/4 cup brown sugar
- 1 mashed ripe banana
- 1 tsp vanilla extract
- 2 cups chocolate chips
Preheat oven to 350. Combine flour, baking soda, and salt in a bowl. In a large bowl, beat together butter, sugar until smooth. Add banana and vanilla extract. gradually add the flour mixture while beating until the mixture is smooth. Fold in the chocolate chips. Drop spoonfuls of dough onto ungreased baking sheets. bake for about 10 minutes.
I haven't tried it yet, but it seems good.

1 cup butter
1 cup brown sugar
2 large eggs
1 teaspoon vanilla extract
3 mashed ripe bananas
3 cups flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
2 cups semi-sweet chocolate chips
1. Preheat oven to 350 degrees F
2. Cream butter and sugar
3. Add eggs, vanilla extract and bananas.
4. Combine all the dry ingredients except chocolate chips in a seperate bowl.
5. Gradually add the dry mixture to wet mixture; mix until well combined
6. Add chocolate chips and gently fold in with a spatula
7. Bake for 12-14 minutes or until golden brown.
