I heard they are suppose to be very good for you so I bought some the other day. I have some recipes but thought someone might have another good one. Any suggestions? I remember having them when I was about 8 years old 40 years ago! My uncle made soup with them and it was very good! Even at age 8!

You can chop up leeks and toss them into salad.  The simplest leek soup is simply cut the up, plunk them in lightly salted water, and gently simmer until tender. 

cockaleekie soup is a British soup that's easy to make.  Chop up some leeks and gently simmer in low-sodium chicken stock until tender.  (If I'm low on chicken stock I'll use a little chicken bouillion and omit any additional salt.)  Add in some precooked chicken bits (or you can poach the chicken in the broth) and a pat of butter (or buttery spread) serve hot.  Traditionally it's served with sliced prunes. 

Cooked leeks sometimes squeak between your teeth -- it's fun!

3 cups minced leeks, white and light green parts
4 cups peeled, shredded all-purpose potatoes
6 cups stock (vegetable or chicken)
1/2 to 1 tsp. salt
1 T. chopped fresh chives
1 T. chopped fresh parsley
freshly ground pepper to taste
1/2 cup fromage blanc or low-fat yogurt (optional, I don't use it)

Wash and mince the leeks.  Simmer the leeks, potatoes, stock and salt in a pot for 30 minutes.

Add the chives and parsley.  Cook for 10 more minutes.

Stir in the pepper and dairy.  Season to taste.  Serve hot or chilled.

I put leeks into almost any kind of soup or stew.  They lend a sweet oniony taste that is unique.  They are also good roasted.  Split the white part in half, toss with olive oil, salt & pepper, and roast at 350 for about 20 minutes, or until they start to turn golden.  Turn them half way through cooking.

And don't throw away the green part!  It's too tough to eat, but contains loads of flavor.  Chop them up and add to home made stock! 
Ya...sarabamanda...that's almost like what I made last night, except for yogurt I added 1 package cream cheese. It was pretty good. Then garnish with fried bacon if you want. I had it both ways and the bacon really adds a lot! I had a bowl for lunch! YUMM-O!
Oooh, that sounds pretty good!  I'll have to try it next time.  :)
Plain leek soup is ok, but I think it is much tastier and more filling if you add a potato or two.  I chop 2-3 leeks, add a peeled red potato or two, and simmer in chicken stock with a bit of thyme until soft.  Then use an immersion blender on it and you have a really low cal and tasty soup.
What Zeul said, but also throw in two cans of artichokes. Mmm... and if you can afford the calories, serve with a dollop of marscapone.
Leek tips

Leeks must be washed carefully to remove grit.  The easiest way to do this is to slice the leeks, then immerse in a large bowl of cold water.  Swish them around and then let them sit for a minute.  The grit will sink to the bottom.  Scoop the clean leeks out of the water and drain.  Do not pour through a colander.  Repeat if needed. 
The soup I made was pretty blah. I think next time I will roast them.
Hey coffeelover - give this a try! We cook a lot with leeks at our house - I like the flavour a little better than spring onion and, basically you can substitute them for spring onions in any recipe at all.  They are also really good in stir frys. I had this recipe handy on the computer so you may want to try it out:


2 medium leeks (white and tender green parts only)

2 tsp olive oil

pastry for 9 inch deep dish pie shell OR potato crust

2/3 cup crumbled feta cheese (about 3 oz)

1 ¾ cups half-and-half cream (do not skimp and choose anything ??lite??)

6 large eggs

2 tbsp honey Dijon mustard

¼ tsp salt

¼ tsp pepper

1 large roma (plum) tomato, cut into 8 slices

Cut leeks lengthwise into quarters.  Brush with olive oil. Preheat fry pan to medium high.  Cook leeks, cut-side down, for about 5 minutes until softened.  Cool.  (Even better if you can cook the leeks on a BBQ grill)

Prepare crust and line the pie plate.

Scatter feta cheese over bottom of the crust.  Arrange leeks evenly in a spoke pattern over the cheese.

Beat next 5 ingredients with whisk in medium bowl until well combined.  Carefully pour over the leeks.

Place 1 slice of tomato between leeks and near the edge of the crust.  Bake on bottom rack in 375 degree F oven for about 50 minutes until wood pick inserted in centre comes out clean.  Let stand about 10 minutes before cutting and serving.  Cut into 8 wedges.


(with pastry shell crust) 1 wedge = 289 calories, 19.4 g total fat (7.3 g mono, 1.8 g poly, 8.7 g sat), 191 mg cholesterol, 20 g carbohydrate, 1 g fibre, 10 g protein, 444 mg sodium.
