Guiltless Potato Chips!

for about 145 (for one potato worth... it's plenty, trust me) calories and no fat, you can eat super tasty chips!
Here's how I do it:
I use a mandoline slicer to slice the potato (skin on) on the thinnest setting (about 1/4 inch). If you don't have a mandoline, slice them as thin as you can with a really sharp knife.
Take a sheet of parchment paper, put it on a plate, put one layer of potato slices on the paper, then nuke it at 30 second intervals on high until the chips are slightly browned and bubbly. They get crispy! So good!
You can sprinkle a little salt and pepper on them before you microwave, if you like, but I enjoy them plain.

Dip 'em in a little Desert Pepper Black Bean Dip and you're on your way to delicious town!

Sounds good, i shoud try that... I was even thinking of baking them, use alittle bit of PAM cooking spray....

Oohhh....I have to try these!  Mind you, I *do* have an addiction problem....started with those damned Guilt-Free Onion possibly fat-free potato chips....what next??!!!  :o)
OMG...These were so good! & they look like real chips...Mmmmm. 
I forgot to put parchment paper ( i didnt have any ) I put them on a plate and they didnt turn out too good.  They took forever to cook, maybe my slices were too thick?  But the stuck to the bottom of the plate and they didnt taste very good... HUMM.. maybe i'll try this again with smaller slices.
