Try this recipe, it's AMAZING, I could eat it every day (and I practically do!). It gets an A- on this site. I used shredded carrots and peas instead of the veggies she used, and I can barely taste the veggies at all. I also used Prego tomato sauce in mine, which is just personal preference, and I added a few red pepper flakes for just a hint of spice.

If you are not thrilled by the taste of steamed veggies and love the richer flavors that those high cal ingredients give.. You should try ROASTING the veggies. It makes them taste all sweet and caramelized and it works fantastically well for all root vegetables (which incidentally are super cheap!) the end result is delicious and very low in calories so you can eat more than you could of the other stuff and feel satisfied. Plus, if you do this for your lady.. she'll be very impressed.
It's super simple, here's how:
- veggies this works well with: onion, sweet potato, regular potato, yams, carrots, parsnips, squash, turnip, swede (rutabega) ... actually almost anything you could think of.
- scrub the veggies (I prefer not to peel them because there is extra fiber in the skin)
- chop into large chunks (ping pong ball sized). Try to keep the chunks of an even size so they all take about the same time to cook.
- throw into large baking tray (line with foil for easy clean up) with approx 2 tablespoons of olive oil (EVOO if you have it) NO BUTTER required, use your hands to toss the veg in the oil so they all have a very light coating.
- sprinkle lightly with salt (I like to use sea salt or kosher salt because it's chunky so you need even less) and pepper.
- Roast @ 350 degrees for approx 40-60 minutes (or until a sharp knife goes into the veggie chunks easily). Veggies should look toasty and brown around the edges (that's where the caramelization happens)
- DONE! Add protein of choice and enjoy!
I agree with the suggested to roast the veggies. I used to be really picky about eating veggies and it was things like peanut sauce and stir fry sauce that really got me into them. Those aren't very american options, but personally, I'm of the view that it's better to have a little cheese with your vegetables than no vegetables at all! So try things like putting some cauliflower into mac and cheese, or some roasted broccoli on top of a pizza. Baby steps. ;)
