I bought a LARGE bunch of Kale today and cooked it all tonight.
I ate over HALF the bunch with my meal.... holy, i am officially a veggie monster. I have a feeling that was several hundred calories in kale....
I've refrigerated the rest and will most likely eat it all tomorrow.
So, one whole bunch of kale in less than 24 hours??? Is that wayyy too much? I probably need more variety :\ (but I am getting plenty of variety as well, I eat my regular meals&snacks on top of this excess amount of veggies!)
Im constipated either way.... veggies or not. So going to the washroom a billion times is not an issue (I wish i could!). And yes, I drink tons of water.
It is probably possible, but you'd also probably have to eat pounds of veggies for that to be bad -- and I think you'd have to eat pounds of kale for that to be several hundred calories (unless you are cooking with lots of oil)
I probably eat about 12 oz spinach, 1/2 lb broccoli, some asparagus, couple of tomatoes, etc almost every day -- no big deal
I wouldn't worry too much about too many veggies. I would, however, worry about the fact that you're too full from the veggies to eat anything else ;) If you had enough of other foods, like meat, dairy, fruits and nuts or something, I think you would be fine.
i could be wrong, but i've always considered veggies an 'eat-all-ya-want' food! as long as you aren't slathering on cheese/ranch/or some other high-calorie dressing in massive quantities, it's fine [not saying you CAN'T have those, just watch the portions!] they're low calorie, so it's a guiltfree mindless-munch for me. i've been known to eat a whole head of cauliflower in one sitting lol!
as long as you are still eating the other essentials, i'd say it's okay. if you were eating JUST veggies, nothing else, that wouldn't be good for you- you're missing out on vitamins & nutrients that vegetables don't offer. that's the whole point of the 'balanced diet!' if i'm wrong, i hope someone corrects me because i'd need enlightening as well!
I also consider veggies as eat all you want food, which is why I eat soooo much of it! But for once I'm thinking its too much :P I am such a veggie monster.
And I've eaten an entire head of cauliflower (a large one too!) in one sitting along with my meal as well.
And no, I don't get too full from veggies at all.
After over half a bunch of Kale (probably several cups of cooked Kale) along with my meal (rice w/ flaxseeds and tandoori chicken) I still had room for dessert - chocolate milk and chocolate soymilk. I am such a sucker for sweets after a meal, no matter how full.
Random unrelated question... I did boil the Kale with about 2 tbsps of oil (it was probably a couple cups of water), is this necessary?? Does it really make the veggies taste different..... or should I just skip it next time? cause I don't think I notice a difference anyways
Um, if you think that is a lot, then I should probably be dead from veggie-overload!
There is NO SUCH THING as eating too many vegetables, unless of course you sautee them in butter &/or cream!
Tonight I roasted Peppers, Onions, Squash, Zucchini, Mushrooms & Green Beans with some sun dried tomatoes and do you want to know how much that whole thing weighed? 2 pounds! Thats right 2 pounds, COOKED!!! And I ate it all topped with 10 ounces of SALMON!!!
I do not think you have a THING to worry about!!!
Oh and by the way, I eat tons of veggies and am constipated just like you! GRRR!!!
Unless you have a specific medical condition that makes it problematic for you to eat certain vegetables, as far as I know you are absolutely fine. I have a genetic factor that makes me more prone to blood clots, and the "Dark Green" veggies (Broccoli, spinach, cabbage, etc.) react with blood chemstry to make my medication less effective (I am on Coumadin). That being the case, I limit my intake of those specific types of vegetables, but I eat carrots, green beans, peas, corn, squash, lima beans, etc. like they are going out of style. So unless you are in this kind of situation, I think you are not only fine, but better off eating tons of veggies.
I guess that too much of anything can be bad...but you'd need a lot of veggies for that I think...
The only problem i'm having with too many veggies is a carrot overload! And now I'm orange, honest to goodness.
I think potatos are the only ones you have to be careful about limiting unless you have a problem with kidney stones and then you need to limit broccoli (high in calcium). I probably eat 2 cups of veggies with each meal. But, I steam everything - no oil, no butter. I don't even put water in to steam them, and they come out sweet. Yummy as is. And about as easy to cook as it gets.
A full cup of cooked kale has only 36 calories. A large bunch of kale might weigh 2 pounds, but will cook down to about 3 or 4 cups. It does seem like you need to learn portion control. Half to one cup of dark leafy greens is enough. Along with it, you should have half to one cup of a bright yellow or orange vegetable like carrots. You should also have a small portion of protein and a small portion of a whole grain, or other high carb food. It's called balanced eating. Cramming large amounts of food at one time does not one thing towards breaking the bad habit of too large portions.
However, overeating vegetables is probably the least harmful thing you can overeat.
hey hun....... each day i eat 3kg of brocc cauli brussles spinich,tomtatos,mushrooms,beans,cabbage and i love them!
no word of a lie, I eat at least six cups of vegetables twice a day.... I've lost about 30lbs. I don't know.... it works for me, cause I want and need volume. Additionally, I really, really like the crunch of raw vegetables.....
just my two cents. 12 cups a day, word.
hmm, well lets think and focus, veggies, everything good in moderation. now what are your goals-gain, lose, maintain your weight?
I too eat a TON of vegetables every day! I often eat a WHOLE bunch of kale with dinner. I figured this to be like 6 cups of cooked kale, which is only about 200 calories. You can't beat the vitamins.
A GREAT way to cook it is to break it into small pieces (about the size of a silver dollar) and put in on a cookie sheet (sprayed with Pam), sprinkle with pepper and bake at 450 degrees. You really need to watch it closely - it cooks fast and you need to turn it over after a couple of minutes. I let them get REALLY crispy (almost brown). They taste sooo good. You can sprinkle some salt on them when they come out of the oven. I actually like these BETTER than potato chips!

The ONLY people who should not do what you did (ie eat alot of green leafy vegetables) are people taking the blood thinning drug Coumadin (also called Warfarin), since it will interfere with that drug's activity and cause blood clots to form (which may be very dangerous and even fatal).
Otherwise, I think you are doing exactly what you should be - eating LOTS of fiber, vitamins, minerals, and little calories. In fact, 6 cups is 6 servings, which is what you should eat in a day anyways :)
I eat TONS of veggies every day as well... In fact, my dinners every night are veggie based with a serving or so of protein. Similar to some postings above, I've always viewed veggies as an "all-you-can-eat" without any added heavy creams or rich, high calorie toppings. I do, however, think it's important (and tasty) to add a teaspoon of olive oil to my veggie medley... sometimes I'll add 1 tsp of sesame oil - yum!! :)

again, it depends what your goals are, if you want to gain weight then i sure hope youre eating lots of other foods as well. lots of veggies are good for anyone, period, but variety is what is most important.
