I've been eating a 1200 calorie and I just want some ideas from others who are also on a 1200 calorie diet! I am on a budget and I am the cheapest person you will ever meet :) I am sorta getting tired of eating the same thing. I'm excited to hear some ideas

Didn't think anyone but me liked cottage cheese and salsa! That's one of my favorites. But when I learned how much sodium is in cottage, I was shocked! I have high blood pressure so have to watch it. Some things that make a 1200 calorie diet interesting are just homemade marinades with chicken, brush on to fish steaks like mahi mahi, tuna. I (inside)grill talapia/tuna/mahi mahi and add chopped seasoned diced tomatoes on top (or just buy them already seasoned with something you like eg basil, garlic, etc). Frozen vegetables are very low in calories and sodium so they are almost like fresh. Keep lots of different ones on hand in the freezer and you don't have to worry about them going bad. Buy family size, they are much cheaper and reseal with a twist tie. Thaw brussels sprouts and then roast them in the oven after spraying with butter flavored spray, sea salt and pepper. I have always enjoyed cooking so "lightening up" my recipe collection in my head wasn't really difficult. I even lightened up my Loaded Potato soup by substituting light parkay and fat free half n half. My husband could not tell the difference. If you like cooking, Cooking Light is a great magazine for ideas from entrees to sides and even desserts. Go online and Google "recipes low calorie" and my favorite recipe site is Allrecipes.com People review the recipes and also give little hints to make it better, or lower calorie, etc. Have fun and good luck with making the absolute most out of the 1200 calories we get everyday. And enjoy that cottage cheese and salsa! Sandi
Thank you sandy! I will definately check out those sites! I love cooking but my husband is not into my whole eating healthier thing :(. I did make chilli the other day and he didn't even know I used ground turkey instead of beef. Hopefully i can get some new ideas and he won't even be able to tell!
OP, judging from your other topic, you're going to up your calories by a few hundred. That will allow you to get a greater variety of foods into your day. I'm eating about 1,500 calories daily and today I had:
Breakfast: Oatmeal made with 1% milk, egg whites with hot sauce, coffee.
Snack: Apple dipped in plain, non-fat yogurt mixed with honey and natural peanut butter.
Lunch: Butternut squash and kale lasagna, peas and a square of dark chocolate
Post-workout snack: Protein shake.
Dinner: Taragon chicken with sweet potato apple gratin and spinach polenta.
Snack: Another square of dark chocolate.
Also, check out MyRecipes.com. They have an entire section of recipes from Cooking Light magazine. I've made tons of them and my entire family loves them (husband, 5-year-old and 2-year-old).
Great! Keep 'im guessing! Luckily for me, my husband lost 25 unneeded lbs over the last year. He has so much more energy that he's more than willing to try some good tasting and good for you food. Spicing things up with herbs instead of salt has been my key. I got a jar of No salt seasoning at Big Lots for a dollar. I sprinkle that on everything, even my salsa and cottage cheese!! LOL
