Cook cauliflower in pan w/scallops. Add a splsh of vinegar at the end of cooking.

Recipe Ingredients for Food and Wine 4-07 Seared Scallps w/Cauliflower, Capers and Raisins

1/2 head cauliflower
1 tablespoon olive oil
2 tablespoons butter
1/4 cup almonds
2 tablespoons capers
2 tablespoons raisins
2 tablespoons vinegar
1 tablespoon parsley
1 1/2 pounds scallops

Recipe Directions for Food and Wine 4-07 Seared Scallps w/Cauliflower, Capers and Raisins

Boil water. Add cauliflower and boil until just tender. Shake off excess water. In skillet, heat oil. Season scallops w/salt and pepper; add scallops to pan in single layer and cook over high heat until golden and crusty, about 2 minutes. Turn the scallopes. Add butter, cauliflower, almonds, capers and raisins and cook undisturbed until the scallops are white throughout and the cauliflower is lightly browned in spots, about 1 minute longer. Add the vinegar and stir gently to coat.
