Adapted from Michael Symon's meatball recipe

Recipe Ingredients for Food Network Meatballs

1 T extra virgin olive oil
1/2 cup onion, grated
1 clove garlic, minced
1/2 cup dried bread crumbs
1 lb ground beef
1 egg
1/2 cup skim milk

Recipe Directions for Food Network Meatballs

  1. Saute onions and garlic in olive oil until soft, but not brown.

  2. Soak bread crumbs in milk, drain excess milk or if using day old bread, squeeze out excess milk.

  3. Mix all ingredients. Divide evenly between 24 mini-muffin tins. Bake at 40 degrees for 15-20 minutes
