Vegetarian alternative to Mozzarella-Prosciutto Panini.

Recipe Ingredients for Fontina & Mozzarella-Caponata Panini

1 English muffin, low fat split
1/2 tsp Italian dressing, non fat
1 tbsp eggplant, prepared caponata
1 Roma tomato, thinly sliced
1 oz fontina cheese (1 slice to fit muffin)
1 oz mozzarella, smoked (1 slice to fit muffin)
1 tsp margarine, soft

Recipe Directions for Fontina & Mozzarella-Caponata Panini

  1. Preheat a heavy skillet or griddle over low heat until a spatter of water disappears quickly. Sprinkle both insides of muffin with Italian dressing. Spread inside of bottom half of muffin with 1 rounded tablespoon of prepared caponata (eggplant appetizer); top with fontina and mozzarella cheese slices to fit muffin. Spread 1 tsp margarine on outside of muffin

  2. Place bottom-side down in preheated skillet. Place a heavy saucepan weighted with 2 canned goods or a brick wrapped in heavy duty foil on top to flatten panini. Cook 3 minutes. Turn and cook on second side 3 minutes with weight in place until cheese starts to sizzle into pan. Remove weight and finish cooking
