Recipe Ingredients for Foil wrapped Salmon with Coucous

8 ounce salmon fillet
1/2 small red pepper, sliced
1/2 small onion, sliced
3 cherry tomatoes, sliced
1/2 tsp. butter
1/2 tsp. lemon juice
1 tsp. parsley, chopped
6 ounce couscous (cooked in water or broth)

Recipe Directions for Foil wrapped Salmon with Coucous

preheat the oven to 350. Place the salmon on a piece of foil. Top with the re pepper and onion along with tomatoes. Dot with butter and drizzle over the lemon juice. Add the parsley, then wrap carefully in the foil and seal. Place in the oven and cook for 20-30 minutes, until the salmon is cooked through. Meanwhile prepare the couscous according to directions and set aside. remove the salmon from the oven, empty into a bowl along with the vegetables and cooking liquid, and combine with the couscous. Can be mashed or pureed as necessary.
