Recipe Ingredients for Foil-Pack Taco Chicken

2 breasts of chicken
4 tsp taco seasoning mix
1/2 lb red potatoes, peeled, thinly sliced (about 2 cups)
1/2 cup salsa
3/4 cup low fat cheese, shredded, mexican style
1/4 cup reduced fat sour cream

Recipe Directions for Foil-Pack Taco Chicken

  1. Preheat oven to 400 deg.

  2. Sprinkle chicken with seasoning mix.

  3. Spray 4 large sheets of heavy-duty foil with non-stick cooking spray (or use non-stick foil).

  4. Place 1/2 cup of potatoes on center of each sheet of foil. Top evenly with chicken, salsa, and cheese.

  5. Bring up foil sides. Double fold top and both ends to seal each packet, leaving room for heat circulation inside.

  6. Place packets in 15"x10"x1" baking pan.

  7. Bake 30 to 35 minutes or until chicken is cooked through (165 deg F).

  8. Remove and let stand 5 minutes; slit foil to release steam before opening.

  9. Serve with sour cream.
