Recipe Ingredients for Foil-Pack Chicken Fajita Dinner

3 chicken breast, skinless
1 1/2 cup rice, instant uncooked
1 tablespoon taco seasoning mix
1 cup onion
3/4 cup salsa
1/2 cup cheese, grated
1 1/2 cup water, hot
3 teaspoon garlic, chopped

Recipe Directions for Foil-Pack Chicken Fajita Dinner

  1. Heat oven to 400 degrees. Fold all sides of three 18 x 12 inch sheets of foil, spray with cooking spray.

  2. Combine rice, water, and taco seasoning, spoon onto centers of foil. Top with remaining ingredients.

  3. Close foil with room for heat circulation inside. Place in baking pan.

  4. Bake 30-35 min or until chicken is cooked through. Let cool 5 min.
