Quick and easy recipe for a variation of focaccia that features wholewheat flour, lots of garlic and herbs. A topping of crumbled feta cubes along with the olives, garlic and herb oil they are marinated in adds extra flavour and texture.

Recipe Ingredients for Focaccia - Wholewheat Feta, Olive & Garlic

285 g plain flour
100 g wholewheat flour
1 tsp salt
1 tsp brown sugar
1 tsp oregano
1 tsp thyme
2 cloves garlic, crushed
1 tbsp active dry yeast
35 ml extra virgin olive oil
250 ml warm water - 40C
150 g APETINA feta cubes snack pack - Garlic & Olive

Recipe Directions for Focaccia - Wholewheat Feta, Olive & Garlic

  1. Place all dry ingredients and crushed garlic in a mixing bowl. Mix well. Add in water and oil.

  2. Mix well and knead until the dough comes together and is no longer very sticky. This is best done in a mixer with a dough hook - knead on medium speed (3-4) for about 5 mins.

  3. Scrape out dough and place into a large oiled bowl. Cover with a damp cloth (optional, depending on size of bowl) and allow to doule in size in a slightly warm place.

  4. Preheat oven to 180C (fan-forced). Place dough into a 30x25cm baking dish lined with baking paper. Punch down and spread dough out so it's abt an inch thick. Make "potholes" with your finger tips (or the end of a wooden spoon if you have long nails! :)).

  5. Pour on 5 tbsp of the oil from the APETINA snack pack over the entire focaccia. From the snack pack: Crumble marinated feta cubes, slice olives & garlic. Spead these evenly over the focaccia.

  6. Bake for 15min in the middle of the oven. Remove and allow to cool in the dish a little before slicing up to serve.
