Recipe Ingredients for Focaccia-Vegan- no salt added 1/8 recipe 1 serving

1 1/4 cup warm water
1/4 oz active dry yeast
1 tsp sugar
3 cups flour
1/4 tsp red pepper flakes
1/2 tsp black pepper, divided
1/4 cup corn meal, set aside
1 tbsp olive oil, for kneading and oiling
1 cup leeks
1/4 cup garlic, thin sliced
2 tbsp parsley, chopped
1 tbsp rosemary, chopped
2 tbsp nutritional yeast

Recipe Directions for Focaccia-Vegan- no salt added 1/8 recipe 1 serving

This makes one flat bread about 10"x15" and divided 8 pieces is the 1/8th serving for this nutritional information. Combine water and yeast, let stand about 15 minutes. Mix dry ingredients together (use half of the cracked black pepper and do not use the cornmeal- keep it set aside) then add the yeast-water mixture and knead adding more flour if necessary to make elastic, form a ball. Place in greased bowl, twist to grease and then flip over and twist again, then cover with wax paper and clean dishcloth. Let double, in a warm room it takes about 1 hour. Lightly oil a pan about 15"x10" and put sprinkle with 3 tbsp of the cornmeal. Knock down the dough that has doubled, place on pastry board with some flour and knead again. Sprinkle balance of cornmeal on the pastry board and roll dough in it stretching it out to the size of the 15"x10" pan. Place dough in the pan and use a little olive oil to press out to fit into edges and sides of the pan, making little dimples in the dough. Then place the veggies and seasonings including balance of the cracked pepper on the dough and let rise again until doubled. When dough has doubled, sprinkle with the nutritional yeast and bake at 425 oven for 20-25 minutes or until slightly golden brown. Transfer the bread to a rack to cool. Serve warm or at room temperature.
